WASTE IN THE WINERY
Wineries are places where the processing of grapes into wine, teas place. Just like any other processing unit, the resulting waste can be of two different kinds:
- processing waste that can be further re-used like pomace, stems, tartaric acid, run-off barrels or wood containers
- processing waste that needs to be disposed of i.e. wrappings of auxiliary products, broken glassware, plastic materials
THE ISSUE OF WASTE IN THE WINERY
Just like any other processing operation, waste in the winery can be of many kinds therefore we can operate a sub-division based on its essence, in:
Waste product from the processing:
- Stems: from the processing of the grapes
- Pomace: from the wine making process or the press

- Lees: dense deposits and precipitates from wine
- Tartaric acid: it comes from the cold stabilization or from deposits on the top layer of the containers and barrels
Among the waste products that could be recycled and are not edible, we can find:
- Plastics: separating sheets to be used on the pallets, light wrappings used for auxiliaries
- Broken glassware from the bottling lines
- Cardboard: used, dirty and broken cardboard used in the wrapping process
