TIPS FOR THE SALE POINTS
- The sale point might not have an ideal room for the wine but the wine might have an ideal temperature, regardless the room where it is served
- There are “special” fridges on sale for both red and white wines that keep a bottle at its best fitted temperature for tasting while the wine is kept at its storage temperature (10 – 14°C and relative humidity of 65%)
- Open bottles should be kept in fridge and be corked appropriately to create a vacuuming effect
- Special softwares could be used to monitor the length of time a bottle is kept in a certain room
- If a bottle has been placed under the sun, it would be advisable not to open and serve it
HOW TO ORGANIZE BOTTLES AT THE SALE POINT
Wine bottles should be stored horizontally so the cork doesn’t dry out.
Bottles can be stacked to not more than five levels or else special devices (called “alveoles”) can be used to store bottles horizontally and safely.
Shelves where bottles are placed can be made of any material but wood seems to be preferable because of its good acoustic and pneumatic features.
FINAL OBSERVATIONS
The best place where to store wine bottles before they are sold, would be the underground cellar (4-5 mt. below the sea level). Optimal features would be if it is dug down on the rock and its walls are made up of rocks and bricks.
The best humidity would be around 65 – 70% while the temperature would be around 11 – 15 °C.
The best lightening should be made with dimmed lights with low voltage (avoid neon light) so to prevent oxidation.
The flooring of the cellar should control humidity: the best technique to do so would be to layer up pebbles and cobbles with soil to layer up and compact so to filter out humidity coming from below.
