(3) PROBLEMS THAT COULD ARISE FROM THE LACK OF APPROPRIATE STORAGE
The following problems could arise if the storage room is not set up correctly:
1) If temperature is too high, cork may dry up after oxygen has flown through or because of microbial or organoleptic alterations
2) If temperature is too low, or in case of thermal shock (6 – 8 degrees) some precipitates may form (i.e. potassium bitartrate or proteic precipitates)
3) In the event of direct lightning or persistent neon light, oxidation processes are likely to happen
4) In case of high humidity, moulds may form on the top of the corks (leading to deterioration of the wine itself). Another circumstance arising from high humidity is that the label falls off or gets spoilt or boxes on pellets lose their turgor
5) Bad smells can be transferred to wine via the cork
6) Dust may be hosted more easily on the bottle as a consequence of humidity

(4) INFLUENCE OF THE STORAGE CONDITIONS ON THE STORAGE OF RED WINES
- A study by Mattivi et al., published in 2015 has monitored 400 red wine bottles
- It was noticed that the chemical age of wine changes according to different storage environments: if wine is stored at home, it ages four times more because some compounds change their concentration as an effect of some chemical reactions induce by temperature
