Many supporters of organic viticulture in Greece resort to “green manuring/fertilization”. It is an ancient agricultural technique that incorporates, with tillage into the ground, nitrogen-rich plants that the vine needs so much. In areas where water is sufficient, organic growers leave the natural vegetation on the vine, imposing a competition, thus preserving the vitality of the plants. In more arid thermal areas, this natural vegetation is integrated into the soil with the first spring tillage. For fertilization, organic compost and manure from organic livestock are also used.
